What hand-rolled semolina changes

You can make couscous quickly. Many do. The semolina swells, you serve it, nobody complains. But it stays dense, and the grains hold onto one another as though they had not chosen to be there.

Rolling semolina by hand is opening it up. You damp it, work it with the flat of the palm, steam it, start again. Three times, sometimes more. The grain separates, lightens, takes in air.

It is work that cannot be seen and is tasted at once. The semolina carries the broth instead of drinking it. It stays distinct under the fork. That is why the kitchen starts early on it, every day, before the first service.
